Malagna Tacos Dorados

I came across the Malagna Roots things in my food box from @westerneaglefoundation, and naturally I had to turn them into tacos…..somehow. After a little research, it turns out I could treat them exactly like ugly hairy potatos.

I was unsure of the flavor so I opted to make some of my favorite types if tacos out of them, tacos dorados, as their fried and stacked with all sorts of accoutrements.

First, I skinned and boiled the malanga up, then smashed them a mixed in some chorizo, cheese, @riega_foods jalapeno citrus and sour cream. Next, I placed the mixture into some corn tortillas and fried them in oil on both sides until crispy. Once a proper crunch was achieved, I placed in a layer of @tiofranciscocheese Mexican crema, quisa fresco, cilantro, pickled red onion, and a massive drizzle of @arthurwaynehotsauce spicy tomatillo sauce.

The malanga definitely had a more nutty flavor than the potatos but these tacos came out fantastic, definitely would make again. 😋
