TACO DAY 1630
RAY’S TRIPLE PORK TACOS and Peppers
A couple of years ago, I visited my buddy @rayme510 at his taco spot, @ranchitoelsinore , and he hooked up the most amazing taco. That taco was filled with al pastor meat, bacon and ham, and topped with salsa Verde on a corn tortilla. I wanted to make something similar to end the year with a killer taco.
I picked up some adobada meat from my local carniceria and grilled it up over some @kingsford charcoal in my @charbroilgrills. With meat cooking, I blended up a tasty salsa Verde with grilled tomatillos, jalapeno, onion, tomato, and chile de arbol then added chopped pineapple and cilantro to it along with a little drizzle of @melindasfoods fire roasted habanero and garlic
I also made some salsa yucateca with habaneros, red onions, and lime juice.
Next, I rolled up @tiofranciscocheese queso fresco inside a few jalapeños with bacon and drizzled them with @melindasfoods hot honey before popping them into the oven. I had a few yellow chilis on the grill blistering up, and when they were soft, I sprinkled on salt, pepper, and garlic along with a little of @melindasfoods Japanese BBQ sauce .
With the adobada ready to go, I fried up some bacon and ham and then my flour tortillas in the rendered bacon fat.
Into the tortillas I piled in a mountain of adobada, ham and bacon with salsa yucateca, and lastly a little pineapple salsa Verde.
These tacos were FIRE!!!!
