TACOS DORADOS DE POLLO

I’ve made these golden tacos several times in the past, but this is the first to use chicken with them. Naturally, I had to use some @brandingironranch Pollo that I picked up at my local @albertsons .

I grilled the seasoned chicken in a cast iron, chopped it up, and placed it into some corn tortillas and fried those to golden perfection. Once the tortillas reached the crunch factor I topped these tacos with a homemade chile de arbol salsa, a wicked cilantrocabbage slaw, Mexican crema, pickled red onions, and topped with cotija and a little more salsa de arbol and plated them with a layer of guacamole.

With 2 lbs I was able to make 14 of these tacos and after we slayed 9 of them, I froze 5 for easy air fry lunch at a future date.
