TACOS WITH JOSE
Unfortunately, we lost a taco slayer a few weeks back, but we had the opportunity to celebrate Jose Castelan’s life yesterday. His wife, Roxy, organized a pretty awesome gathering of his long time friends and family near the beach, and everyone shared stories and good times they had with him.
I had no idea Jose was watching the Taco Slayer content until he reached out in December asking about a recipe for crispy potato tacos. I had no idea the battle he was fighting at the time, but he really pumped me up talking about all the deliciousness he sees on my page. I gave him a recipe and he asked about my family, asked about our hiking, asked about my Thanksgiving, and then to find out later he was so ill. After yesterday I learned that he was just that kind of guy. He cared lots for others, loved his friends, loved his wife, loved his family and loved building people up. He surfed, golfed, raced RC cars, snow boarded, and had friends from all those hobbies there to show him love. It was very cool and he will be missed.
Naturally, Roxy had tacos served for everyone and @josestaquizas did a great job .
