A few years back my taco brethren Chris from @eatmigos worked with a taco shop to bring his own taco concept to life. That taco was packed with refried beans, chorizo, cheese and bacon in a flour tortilla, it’s a delicious mixture and since it’s been a while since I tried to make one at home I figured we’d try again. This time I made them in the style of my favorite tacos, Dorados.
I mixed together chorizo and refried beans and added them into a corn tortilla with mozzarella. I cooked the tortilla and mixture in a shallow pan with oil until crispy and once ready I added in all the accoutrements . First a layer of guacamole, cilantro cabbage, pickled red onion, avocado, and Mexican crema. And since @eatmigos is based out of Texas I had to add in some Texas hot sauce so grabbed a fresh bottle of the very wicked @mikeyvshotsauce Sam Sauce.
This sauce is absolutely wild with roasted tomatillos, jalapeños, Japanese black vinegar, yuzu vinegar, 7 pot primos, garlic and habaneros. I picked this sauce up my local #inlandvalley spice dealer @thespicysister.ca !
