For Day 218 of the non stop taco action we tried our hand at AL PASTOR in our oven. Al pastor tacos usually sit on a vertical spin ensuring maximum flavor dispersion. Unfortunately that technology isn’t available in my home. Instead we made it work and after we sliced the meat from the trompa, we dropped in a pan to sear the edges. This is one of my favorite tacos and it freaking awesome to recreate the flavor at home. Street style topped with onions, cilantro, cotija, diced pineapples and salsa.
