POLLO ASADA TACOS W/ SERRANO SALSA VERDE

These tacos were wickedly delicious and pretty simple to make.

First I whipped up a marinade for the chicken using apple cider vinegar, lime juice, orange juice, chipotles in adobo sauce, mexican oregano and chopped onions. I let the chicken, a couple pounds of leg meat, bathe in the marinade inside the fridge for a couple hours before pulling it out and grilling over the hot coals of my old school bbq.

While the chicken cooked up, I wandered back inside and blended up tomatillos, serranos, onions, garlic, cilantro and lime juice. I usually cook my tomatillos first but blending them fresh turned this salsa the brightest green color.

With the chicken and salsa complete I assembled up these tacos using some grande corn tortillas from @elcomalproducts. After piling in the meat salsa verde I placed in some purple cabbage and diced red tomatoes leaving a colorful and extremely tasty final product.
