CARNE ASADA & BACON WRAPPED ROLLIE TACOS
Simply one of the best tacos ever and I’m surprised it’s more of a backyard bbq tradition than a specialty on a food truck.
These tacos start with a small flour tortilla, from @elcomalproducts , toasted and covered in guacamole, from @yucatanguac . Next I place hefty layer of carne asada meat before slapping in some cilantro. Mounting this taco is the bacon wrapped jalapenos and some tasty vinegar soaked red onions.
The bacon wrapped and queso stuffed jalapenos are definitely the highlight of this taco. The bacon we used was a THICK peppered cut and the cheese stuffing was a spicy jalapeno jack. The Rollies or Poppers take about 20 min to cook which gave me ample time to prep and cook the meat and red onions.
Now the red onions have been getting a little different treatment lately. I found that soaking the sliced red onions in a little pool of mild rice vinegar for approximately 20-30min giving them a very savory flavor and crisp texture.
Do you top this taco in a red sauce or a green sauce? Do you add salsa or do you add a crema? Do you eat as is or do you pull out the hot sauces?
