HATCH CHILE CHORIZO TACOS
It’s been a while since I got my hands on this awesome chorizo. It has a phenomenal flavor profile that goes great with everything I use it for, only I specifically use it for tacos 😎.
Before starting my cook I sliced up a red onion and doused it in lime juice, salt and garlic pepper. This gave the onion a chance to soak in some of those flavors.
After cooking the chorizo up I place a few scoops into my cheese crusted corn tortillas followed by a couple avocado pieces and drizzle of mexican crema. Next was the cilantro, the lime soaked red onion, and a real decent amount of my homemade habanero sauce.
Just yum 😌
