Classic chorizo breakfast for dinner should be a requirement atleast a couple times a month.
So quick to make and absolutely tasty!
I used a vegetarian chorizo as my base and cooked it up with 7 or 8 eggs. I also cooked up some breakfast sausage to make up for the vegetarian chorizo .
Once ready I piled my eggs & chorizo over a flour tortilla with a little melted and crusted mozzarella cheese. Next I added in some cilantro, pickled red onions and copious amounts of cotija. Before eating this taco treat I poured in a few drops of @elyucateco_hotsauce XXXX habanero sauce to give it the appropriate amount of heat and spice.
