POTATO CHIMICHURRI TACOS
In the never ending search for the next great taco I came across a few photos of chimichurri topped potato tacos and NATURALLY I had to try it out.
First I made my chimichurri so that all the fresh parsley and cilantro flavors could merge with the mixture garlic, onion, oregano, pepper, salt, jalapeno, red wine vinegar and olive oil.
Next I chopped and boiled my potatoes up before seasoning them with @meatchurch Fajita and baking them for about 30 min.
Afterwards I pulled out a couple flour tortillas and toasted them on a comal with a little oil and then piled in the potatoes, a very generous scoop of chimichurri, a few crumbles of queso and a very solid drizzle of @cutinosauce ghost for maximum heat!
