STUFFED POBLANO TACOS with a creamy red serrano & hab sauce
These tacos started off by stuffing some poblano peppers full of queso before placing them into the broiler for a few min. When the peppers get toasted and soften up with melted cheese I pull them out and chop them up on a cutting board.
I ready up a tortilla (blue corn today) by placing in a non stick pan and covering it with the chopped up queso and poblano. Once the pepper queso combo has melted itself to the tortilla I flip it face down to crisp it up a little. Next thing layed down is a generious helping of guacamole and handful of steak. Over the steak sits some pickled red onions, cilantro, and a homemade red serrano/habanero cream hot sauce that really lit this taco on 🔥🌮
