PORK RIB AL PASTOR TACOS

Tried to get creative last night with a pack of ribs I scored for a great price. I’ve never tried to use pork rib meat for any other purpose than making a mess and getting bbq sauce all over my face but thought I’d try marinating them in the same adobada marinade typically used for Al pastor (or adobada).

After the meat and the marinade got to know each other for a few hours we heated up the grill to around 300° and directly over the fire placed the ribs. I returned to flip the meat every 10 min while  chopped up onions and cilantro in the mean time letting my red onions soak in a bowl full of mild rice vinegar until it was dinner time. I also took some time In-between flips to mix together some masa and make a few homemade tortillas.

Once the meat was ready we simply piled the meat into the tortilla over a little guacamole from @yucatanguac before topping this taco of in the cilantro, onion, and finally some pineapple Ghost pepper sauce from @magohotsauce .
