COUNTERFEIT RAISING CANE’S TACOS

I think everyone is on the same page when it comes to @raisingcanes chicken, it’s delicious, but how would a raising cane’s chicken inspired taco taste?

These tacos have been in my brain ever since my kids came home one day with these extra tray papers from our local Cane’s.  This meal started out early by slicing 4lbs of chicken up into taco sized strips before soaking them in buttermilk and egg for hours.

While the chicken rested in the milk i whipped up a version of the Cane’s secret sauce recipe that I got from a disgruntled store manager. Once mixed, the sauce also needed to rest for a few hours in the fridge.

As dinner time approached I started working on the slaw. Sorry Cane’s but your slaw isn’t very good so I followed @joshuaweissman recipe instead. Josh’s better slaw recipe included cabbage, carrots, pickled onions, pickles buttermilk, mayo and chives. However I replaced the chives with cilantro because tacos.

Once the slaw was completed we pulled the chicken out of the buttermilk mixture and dredged them into a flour, breadcrumb and spice shower before they bath in hot oil to get all golden and crispy. While the chicken finished I started work on Texas toast inspired tortillas.

For these tacos I used a thicker flour/corn hybrid tortilla. Before laying the food inside them we melted together butter and garlic then used that liquid to toast each side giving them that signature flavor.

Finally we dropped in a pile of slaw into the Texas toast tortilla followed by a couple strips of chicken before the Raising Cane’s sauce drizzled over the top of the meat. I know you’re wondering about the heat factor but don’t worry because I had a bottle of @crystal.hot.sauce extra hot to pour onto every single bite I took. ‍
