SMOKEHOUSE CRACKER COVERED FRIED CHICKEN TACOS
A couple years back one of my best friends presented me with some wicked tasty @smokehousecrackers . These award winning crackers are typically not available on my side of the country so when I get my hands on them its freaking heaven.
These crackers are so good I figured it was about time I turned them into a taco. In order to make that happen I smashed, pounded and hammered the crackers into crumbs before dredging them with flour onto some buttermilk, Tabasco pickle juice and egg soaked chicken pieces.
Once dredge and coated I placed the chicken into some extremely hot oil until crispy.
These tacos start off with a nopales infused corn tortilla with one side coated in cheese. Next a layed in a pile of slaw made up of cabbage, carrots, green onions, broccoli, and tomatoes from our garden. Over the slaw I set in a couple pieces of the SMOKEHOUSE chicken bites before covering them in some @hi_spice/ #mauibeefarm habanero infused honey. I finished these tacos off with a garden red pepper relish I made using fresno peppers, red bell peppers, scotch bonnet peppers and a little onion salt, garlic, and red wine vinegar.
It was sooooo freaking good and with the honey and relish it was next level.
