TACOS DORADOS DE PAPA
Firstly I’d like to say these were the BEST vegan tacos I’ve ever made. I was inspired by the vegan ones we had at Disneyland and I had to learn how to make a vegan friendly Mexican style crema.
After a little research I found that the vegan crema is simply some water soaked cashews, lime juice, lime zest, onion salt and salt and HOLY SMOKES it’s delicious!! Next I chopped and boiled a few potatoes, then got to mashing. I seasoned the taters with @meatchurch Fajita before stuffing handfulls inside of corn tortillas and fried them up until golden.
With the tacos crispy I piled on a lathering of the vegan crema, a handful of Vinegar soaked cabbage/cilantro, some lime soaked red onions, another drizzle of crema and finally a whole bunch of @donwapohotsauce Salsa de Ajo Callejera!!
Some of the best tacos I’ve ever had…….booom!
