Chorizo, potato and adobada loaded Tacos
I started these tacos off with an idea of whipping up some of @rick_bayless ‘s gritty chorizo, potato, onion tacos but during the griddling I realized I had left over adobada that would fit perfectly with these flavors.
I fried the adobada up in bacon grease and afterwards piled it and the chorizo/potato/onion concoction into a hot flour tortilla housing a crispy piece of cheese and a layer of refried beans. We drizzled on a little crema, cilantro,pickled onions and a whole bunch of one of my favorite habanero sauces of all time, Roasted Habanero from @magohotsauce .
